Vitamin B12

How does the vitamin B12 form in Kanne Bread Drink?
Organic Kanne Bread Drink is the product of the fermentation of organic whole grain bread and water. The vitamin B12 it contains, therefore, originates from a natural process. In contrast to other products that contain vitamin B12 as an artificial additive, the lactic acid bacteria contained in Original Organic Kanne Bread Drink® are capable of synthesizing vitamin B12 as a metabolite.

The human body needs vitamin B12 as a coenzyme of several enzymes that are, for example, involved in the metabolism of amino acids. This makes vitamin B 12 a crucial vitamin that helps the human body stay healthy and plays an important role in the division of cells. The body needs vitamin B 12 in order to maintain the proper function of the immune system, the energy metabolism and the formation of red blood cells. What is more, vitamin B 12 helps diminish fatigue.

Lactic acid or lactobacilli?

When people talk about Original Organic Kanne Bread Drink, they often mention the lactic acid bacteria it contains. But what is the difference between these bacteria and lactobacilli?
The difference lies in the way they are synthesized. Most people associate lactic acid and lactobacilli with yoghurt, cheese and other dairy products as they are also found in dairy products.

However, at Kanne we are concerned with the fermentation of organic whole grain bread. Similar to the process used to produce sauerkraut, this process generates lactic acid bacteria that fall into the family of lactobacilli and that are capable of synthesising lactic acid. This is why Organic Kanne Bread Drink is also suitable as a starter for pickling lacto-fermented vegetables.

Amino acids and enzymes

Amino acids are of particular significance to the nutrition as they form the essential components of the body. As a pre-stage of enzymes and proteins they provide for a constant regeneration of human tissue. For instance, antibodies are largely composed of amino acids and are, therefore, of great importance to a properly functioning immune system.

Enzymes are paramount to an efficient metabolism. They control / enable the biochemical processes that need to take place in the body to, for instance, harness minerals and vitamins.

The amino acids and enzymes contained in Organic Kanne Bread Drink and Kanne Enzyme Fermented Grain are available at well-balanced ratios thanks to the natural production process, while the fermentation process ensures that these components are broken down in such a way that they are most usable to the human body.


Minerals are vital inorganic nutrients and include sodium, potassium, magnesium and calcium. These minerals / trace elements vary in the functions they assume for the human body. Some are responsible for the function of nerve cells, while others serve as components of hormones or promote cell function as solutes, i.e. electrolytes.

Aside from vitamins, amino acids, enzymes, lactobacilli and yeasts, Organic Kanne Bread Drink contains minerals and trace elements as additional components of the Kanne Bread Drink products. pH value 3.0

Organic Kanne Bread Drink is acidic! The lactobacilli synthesised during the fermentation produce lactic acid and acidify the drink, giving it a pH-value of 3.0 - 3.1.

Despite this acidic pH-value, Organic Kanne Bread Drink acts as a base at the cell level as the existing lactic acid penetrates the cell, replacing the acids and deposits that have accumulated in the cell and flushing them out in the process. The lactic acid inside the cell is burnt / metabolised into carbonic acid and water. In consequence, this process flushes out any detrimental acids, neutralising the body.
If consumed regularly and accompanied by healthy nutrition habits, Organic Kanne Bread Drink helps neutralise acids in the body.
