We started developing our purity requirement for bread and bakery products 50 years ago. The principal idea behind this requirement is simple, but was highly progressive at the time it was conceived as, back then, terms like food allergies, irritations, additives and intolerances were virtually unknown. We made it our highest priority to bake bread the natural way as it ranks among the most natural foods there are.
To us, this principle sets certain demands:
Our baking process dispenses completely with chemical emulsifiers and chemical flour improvers of any kind. Instead, we bake exclusively with natural raw materials and in accordance with traditional recipes. Delicious, natural and healthy – baked with our own natural sourdough and without any chemical additives. We have been true to this point of view throughout our existence as a company.Kanne's success story began more than 100 years ago with the founding of the first Kanne bakery branch. Today, the company is owned and operated by the fifth family generation. Headquartered in Lünen, the Kanne bakery today operates with more than 30 branches in the region of Lünen, Werne, Selm and Dortmund.

All baked goods are exclusively from our own production and made the natural way. It is thus a matter of course that our bread is baked with our own natural sourdough. The organic grain that we use for our whole grain bread and whole grain buns comes, for the most part, from organic farmers in our region. It is freshly milled in our own Tyrolean stone mill every day and then used for a variety of tasty products.
The conventional baked goods and pastries and cakes are also made without adding chemical flour improvers. Our range of products includes more than 40 types of bread, from French baguette all the way to organic Westphalian Pumpernickel and about 25 different types of buns. Cakes and baked goods, wedding cakes as well as our own marzipan and chocolates production round off our product selection. We use neither emulsifiers nor flavouring agents for our cakes.

For this reason, we have developed our own purity requirement and can guarantee that:

We do not use ready-mixes or self-raising flours

We make all of our products ourselves and put all of our expertise and imaginative craftsmanship into them, for this is the only way for us to guarantee that our customers receive only the most natural products when shopping at our bakeries.

There are no chemical flavour enhancers for us.

Taste requires time and ingredients of superior quality. We make use of the natural aromas that are innately contained in our raw materials and turn them into flavourful baked goods by giving the dough the rest it needs and by following traditional recipes – a pure and wholesome approach that does completely without any flavour enhancers.

We do not use imitation or replacement products

Making our products in a fully natural way and with exquisite raw materials only means to us: we bake our bakery products with butter, concentrated butter or sunflower oil instead of cheap fats that have been hardened artificially. Another ingredient you will never find in our products is so-called cheese analogue or ham analogue. The cheese we use comes exclusively from the dairy and is used with milk produced by cows.
In short: Kanne products never contain cheese or ham analogue!

Only natural sourdough and no freshness enhancers

To keep our breads fresh, we make our own natural sourdough and allow it to mature for more than 50 hours until it contains the right amount of proper lactobacilli that are needed for a good bread and make it possible for us to dispense with any chemical freshness enhancers.

Vitalised water

We add natural oxygen to the water we use for the doughs we make every day. This addition gives our dough its positive expansion properties.

Only natural salt

Our company uses only natural salt, which means that our salt does not contain any chemical anti-clumping agents that serve the purpose of making the salt easier to pour.

This purity requirement is a principle that we live and breathe at our company.
It is what we, the Kanne family, vouch for with our name.
